Wet Burrito Recipe

Ingredients

  • 4 flour tortillas
  • 1 Cup shredded cheese, preferably a jack and cheddar mix
  • 1 medium sized onion, finely chopped
  • 1 16 ounce can of pinto beans, cooked
  • 1 Cup Spanish rice, boiled
  • 2 Cups skirt steak, cooked
  • 1/2 Cup sour cream
  • 1/2 Cup guacamole, store bought
  • 1 Cup salsa, store bought
  • 1 ten ounce can of enchilada or ranchera sauce
  • Extra sour cream, guacamole, and cheese, for topping

Directions

Place tortillas, wrapped in foil, in an oven preheated to 350°.

Meanwhile, sauté onions in cooking oil in a medium-sized saucepan until translucent. Stir in pinto beans and cook until desired it reaches the desired temperature.

Remove tortillas from the oven. Portion the beans, steak, cheese, guacamole, sour cream, and salsa evenly in the center of each tortilla.

To assemble, first fold one half of the tortilla until it covers the filling. Take the adjacent sides and fold them over the first fold. Holding the three folded sides taught, and wrap the fourth corner tightly over the other three.

In a separate sauce pan, warm enchilada sauce on medium heat. Pour over burritos, and top with more sour cream, cheese, and guacamole.

Wet Burrito Recipe - Recipes

Optional Additions:

  • Chili powder or cayenne pepper to taste (if you like things spicy)
  • 1 small pureed zucchini*

Burrito Fillings:

  • 2 cans of refried pinto beans (or homemade if you have the time!)
  • 3 tablespoons canned pureed pumpkin or sweet potato – optional, but I always add a veggie to every recipe I make!
  • 6 tortillas
  • Your favorite vegan cheese
  • Vegan yogurt or sour cream
  • Cilantro
  • Jalapeños
  • Salsa (pico de gallo works best here)

Preparation

  1. Preheat oven to 350°F
  2. Combine sauce ingredients on stove top, bring to a boil and simmer
  3. Taste for desired spice level. If you prefer spicier, add ground chili or cayenne peppers. If it's too spicy, add a little more veggie broth to bring the spice down a notch
  4. While the sauce is simmering, combine pinto beans with desired veggies, and stir.
  5. Fold the filling inside the burritos.
  6. Pour Sauce on the bottom of a 9x13-inch glass pan
  7. Fill the pan with the burritos and covert them in sauce (spoon over any tortillas that get missed or the tortilla with be crispy instead of soft).
  8. Top with cheese and bake for about 20 minutes or until the cheese is browned.

What is in wet burritos?

To make these wet burritos smothered in saucy goodness, you&rsquoll need the following ingredients:

  • Flour tortillas &ndash for this recipe we use 10-inch flour tortillas. You can use bigger if you want, but I wouldn&rsquot recommend trying to go smaller.
  • Ground beef &ndash few things are as filling and satisfying as a burrito stuffed to the gills with meat and cheese.
  • Taco seasoning &ndash you can use a packet of taco seasoning or 2 Tablespoons of homemade taco seasoning. This will flavor your ground beef and thus your burrito!
  • Black beans &ndash canned black beans make these a cinch to prepare and assemble! You can also substitute refried beans, pinto beans, or your favorite variety.
  • Onion &ndash a bit of diced onion adds a whole lot of flavor and a bit of burrito filling.
  • Cheddar cheese &ndash the crowning glory of any burrito, in my opinion, is ooey-gooey-melty cheese. Shredded cheddar will provide part of your filling and part of the &ldquowet&rdquo or &ldquosmothered&rdquo burrito topping.
  • Lettuce &ndash any kind of shredded lettuce will serve your purposes here.
  • Tomato &ndash tomatoes are an optional filling choice. If you prefer, you can serve your lettuce and tomato on top after your burritos are done cooking, rather than inside. Adjust this recipe to your tastes!
  • Enchilada sauce &ndash for this recipe we use a mild red enchilada sauce, but feel free to use a green enchilada sauce or amp up the spice factor with a medium or hot variety!
  • Cilantro Lime Dressing &ndash this is totally optional, but I absolutely LOVE the flavor of this simple dressing on top of my wet burritos. Check out the recipe here!


How to make wet burritos?

  1. Cook ground beef &ndash this is probably the most difficult step and it&rsquos a stretch to call it difficult. I like to double whatever ground beef I&rsquom cooking so I can save some in the freezer for an even quicker and easier future meal!
  2. Assemble the burritos &ndash combine all those tasty fillings and roll &lsquoem up!
  3. Arrange in a baking dish &ndash this recipe fits great in a 9×9 casserole dish, but if you&rsquore making a double batch, start piling them into a 9×13.
  4. Top with enchilada sauce and shredded cheese &ndash this is the &ldquowet&rdquo part of your wet burrito.
  5. Bake burritos &ndash these wet burritos are a baked burrito recipe so all that saucy goodness gets fully saturated into those tortillas.
  6. Garnish your baked beef burritos with salsa fresca, sour cream, avocados, fresh cilantro, jalapenos, cilantro lime dressing, or any other topping you can dream up!


Ingredients

  • 1 lb ground beef
  • 1/2 cup onion (chopped)
  • 1 garlic clove (minced)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (4.5 ounce) can diced green chili peppers
  • 1 (16 ounce) can refried beans
  • 1 (15 ounce) can chili without beans
  • 1 (10.75 ounce) can condense tomato soup
  • 1 (10 ounce) can enchilada sauce
  • 6 (12 inch) flour tortillas (warmed)
  • 2 cups shredded Mexican cheese blend
  • 2 cups shredded lettuce
  • 1 cup tomatoes (chopped)
  • 1/2 cup green onions (chopped)

Directions

Crumble ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add onion, and cook until translucent.

Drain grease and season with garlic, cumin, salt and pepper. Stir in the green chilies and refried beans until well blended. Turn off heat, but keep warm.

In a saucepan, combine the chili without beans, tomato soup and enchilada sauce. Mix well, and cook over medium heat until heated through. Turn off heat and keep warm.

Place a warmed tortilla on a plate, and spoon a generous 1/2 cup of the ground beef mixture onto the center. Top with lettuce and tomato to your liking. Roll up tortilla over the filling.

Spoon a generous amount of the sauce over the top, and sprinkle with cheese and green onions.

Heat in the microwave for 30 seconds, or until cheese is melted. Repeat with remaining tortillas.
