Linguine with prawns recipe of 27-01-2012 [Updated on 05-12-2015]
Linguine with scampi is the fish dish of the week, this time my husband didn't resist much, but after all with such a dish how could he have pulled back? Linguine with scampi is a first course that I love and cooked in this way they are a real delight, the idea of first making a bottom with the heads I saw on the web and proposed it a boy named ropa, I would say that the flat so he gained a lot. How to make linguine with scampi
Clean the prawns by separating the heads from the tails.
Remove the eyes from the heads and remove the carapace and intestines from the tails by making a cut with scissors under the abdomen (keep 2 scampi with the shell for the decoration of the dish).
In a large pan pour the oil in which you will cook the sliced garlic, parsley and the heads of the prawns for a few minutes.
Mash the heads with a wooden spoon to release all the flavor and blend with the white wine.
Now lift the heads of the prawns and add the tomatoes that you have previously cut into 4 parts, add salt and cook for another 5 minutes.
Now add the scampi to the sauce and cook over high heat for a couple of minutes more
Add the linguine cooked al dente and sauté the sauce in a pan, adding some fresh parsley and pepper.
Serve the linguine with the prawns and serve
