The rice fritters are a typical Tuscan dessert of San Giuseppe even if they are prepared in different regions of Italy even during the Carnival. These are sweet pancakes made of rice cooked in milk flavored with lemon to which raisins are often added, it was the first time I tasted them and I must say that I found them delicious! As I anticipated in this week's newsletter, the week dedicated to regional specialties begins today, I will touch Puglia, Liguria, Abruzzo and other regions that inspired me during my trips to Italy. How to make rice pancakes
Put the milk, sugar, rice and lemon peel in a saucepan
Start cooking by stirring from time to time.
Cook the rice over low heat by absorbing all the milk, then remove the lemon peel. When the rice is cooked, turn off the heat and let it cool completely.
Then put it in a bowl and add an egg yolk
Stir then add the raisins previously soaked in water and rum.
Finally, stir in the whipped egg white
The dough must be creamy
Shape into balls with the help of a spoon and fry the pancakes in plenty of hot peanut oil.
Once golden on both sides, lift it with a slotted spoon and place them on a plate lined with absorbent paper.
Sprinkle the rice pancakes with granulated sugar and serve hot
