Cut the butter into cubes, add the sugar and mix until you get a cream. We add, one by one, eggs, mixing continuously. Add the grated orange peel through a large grater, rum essence and milk and mix. Sift the flour, mix it with the baking powder and add this mixture over the above mixture. Divide the dough in two .... one part we leave as such, and on the other side we add cocoa and mix. Grease a cake tin with oil and line it with flour. We pour in the form first, the cocoa dough, and on top we pour the simple dough. Put in the preheated oven, at 180 degrees C, for about 40 minutes. To check if the cake is well done, we do the toothpick test. When the cake is done, remove the form from the oven, cover with a kitchen towel and let it cool, then remove the cake from the form. While the cake is left to cool, we take care of the icing. Melt the broken chocolate and butter on the steam bath. Let it cool a bit, then pour the icing over the cake, letting it drip on its sides. Above the icing, I sprinkled coconut flakes. Let the icing harden and then we can slice.

Ingredients needed for Dutch cake:

  • 2-3 apples
  • 4 eggs
  • 100 g butter
  • 6 tablespoons sugar
  • 8 tablespoons flour
  • a cinnamon powder
  • half a teaspoon of baking powder
  • a sachet of vanilla sugar

Dutch cake preparation method:

Peel an apple, grate it and slice it with 2 tablespoons of sugar and cinnamon. Leave it for about an hour (NOT on the fire! Set aside on the kitchen table).

The butter at room temperature is mixed with the rest of the sugar and vanilla sugar, then whole eggs, baking powder and flour are added in turn. The result is a dough similar to that of pandispan, but a bit thicker.

Put it in a cake pan greased with oil (I would recommend lined with baking paper, greased with oil) then put the apple slices (not like I did!) Tightly glued to each other, so as not to tub at the bottom of the tray, but stay standing, as you placed them (which I did not do, and that's why I found the apples on the bottom of the tray when I overturned the cake).

Put the tray in the hot oven, over medium heat for about an hour, or until it passes the toothpick test. After removing the tray from the oven, let it cool for 10-15 minutes, then remove the cake from the tray. After that you can portion and serve.

Even if the apples do not stay on the surface, it is a very tasty and aromatic cake.

  • 50 ml oil (I used sunflower oil, but next time I will replace it with coconut oil)
  • a pinch of salt
  • 300 gr fresh blueberries (washed and drained)

  1. the whites are separated from the yolks. Beat the egg whites with the salt powder. Gradually add the sugar until you get a "sticky" foam.
  2. Mix the yolks separately in another bowl with the gradually added oil.
  3. add the yolk mixture over the egg white foam and lightly incorporate with a silicone spatula. Gradually sprinkle the flour with baking powder (which we sift). We homogenize everything with the silicone spatula.
  4. Half of the composition obtained is poured into a cake form greased with butter or lined with baking paper (I chose the second option).
  5. Then place a layer of blueberries. Cover with the rest of the dough and place the remaining blueberries on top.
    the cake is left in the oven for about 35 minutes, until it passes the "toothpick test". Bake the cake at 180 degrees until it browns nicely on top.
  6. Let it cool completely, then remove it from the mold (remove the baking paper). For the topping, I melted the chocolate on a bain-marie, then, with a spoon, I poured over the cake.
